 Chef Gregg Sessler has reunited with his friend and business partner, John Akar, after spending the
past five years in the San Francisco Bay Area and the Northern California Wine Country.  Gregg
has spent the past three years as the Executive Chef and Wine Buyer at The Caprice, where he
reinvented the restaurant into one of the Bay Areas premier dining destinations. His critically
acclaimed menus featured seasonal cuisine with both modern and classical influences.

Sessler's love of wine and food led him to develop a diverse international wine list at The Caprice,
as well as working toward becoming a certified sommelier through the Court of Master Sommeliers. Sessler brings with him from California the experience of having worked closely with local farms and farmers in order to ensure the freshest seasonal produce reaches the table. 

Sessler's love for Mediterranean cuisine, and the idea of sharing many different plates during a
dining experience, led to the creation of Cava.   Chef Sessler is excited about this unique opportunity to offer such an open format to serve his guests. And hopes that you enjoy the interaction between the chef, guest, food, and wine that exists at Cava.

John Akar has been a staple of Seacoast dining for the past decade. John has worked most recently
for the critically acclaimed Agave Mexican Bistro based out of Newburyport. When John was offered
the chance to manage and oversee the creation of Agave, Portsmouth, he ran with the idea of being
back in his beloved Portsmouth. John, a veteran of The Oar House and The Beach House, was
anxious to make his way back into New Hampshire.    

John's motivation led him to seek out his own restaurant space. John relishes the idea of using his personal relationships and skills to insure that Cava will be full of happy and loyal customers for years
to come. John's personal touch on service is a testament to his drive and love for the business.
